Can you tell me why?

The metal is much more rigid, has no problems with glue or paint and is far more accurate (all cans closer to same size)...

Seems quite an obvious idea now you mention it... How much texture is there on the can under the label?
You can get tiny cans of beans as well (assuming this is a half-can?) that might open up other options. How big is it relative to the good old Pringles tube?

I'd prefer card as its easier to cut if you want to modify the building. I just know that sooner or later some muppet would cut themselves too, lol.

What about the small pringles tubs?

Agree it would lose some flexibility, but for a small structure that wouldn't matter too much. It would be a great start for a small cottage-type building.
